2.Mix Dough: In a large bowl, combine the starter, yeast water, olive oil, and flour. Add salt last. Mix into a shaggy dough.
3.Knead: Knead on a floured surface for 8–10 minutes (or in a mixer 5–6 min) until smooth and elastic.
4.First Rise (Shortened): Cover and let rise in a warm place for 1 to 1.5 hours, or until nearly doubled.
